Built From the Inside
We know how institutional food actually works.

Built by someone who worked inside NSLP and CACFP programs. The compliance gap isn't intent — it's infrastructure.

What We Believe

Food should come from the places closest to the people eating it.

There's no reason a school in New York City should be serving apples from Washington State when there's an orchard an hour away. The distribution just hasn't been built for it. That's what we're fixing.

🥦
Fresher produce
Local produce travels days, not weeks. The difference is measurable — and it matters when you're feeding kids.
🏦
+19¢ per lunch
NYS pays schools an extra 19 cents per lunch when 30% of food spend goes to NYS farms. Only 1 in 10 programs claims it — usually because the documentation isn't there. We produce the documentation your SFA needs to file the claim.
🔗
A supply chain hedge
Three distributors control most institutional food supply. Regional sourcing isn't just a values choice — it's a risk mitigation.
🌱
Farms grow what's committed
One institutional buyer, every week, changes what a farm will plant and certify.

Good food shouldn't have to travel across the country to get to the kids eating it.

Most institutional food moves through three national distributors who charge high margins on produce that's traveled weeks to get there. The farms close enough to deliver fresher, better food in less time are locked out because the paperwork and payment terms were never designed to include them. We're building the layer that connects them, so institutions can buy from their neighbors instead of from a warehouse two time zones away.

What We Stand For
A few things we believe, simply.
Local food is better food.
Produce that travels days, not weeks, is more nutritious and better tasting. When we're feeding kids who may not have a reliable meal outside of school, that difference matters. Buying local isn't just a sourcing decision — it's a nutrition decision.
Small farms deserve institutional buyers.
The reason they're locked out isn't quality or capability. It's documentation burden, payment terms, and minimum volumes that were never designed for them. We remove those barriers.
Farms should be paid in days, not months.
Net-60 payment terms bankrupt small farms waiting to get paid for food they've already delivered. We pay farms within 7 days, every time, regardless of when the institution pays us.
Documentation shouldn't be the reason local doesn't happen.
Every institutional buyer we've talked to wants to source more locally. What stops them is compliance paperwork. We handle it automatically so the answer is always yes.

Grow with us.

Tabla works demand-first — we collect committed orders from institutional buyers before placing orders with farms. You know what you are selling before you harvest it.

How it works
Committed orders. Reliable payment. Less guesswork.

We aggregate purchase commitments from NYC schools, hospitals, and universities, then place confirmed orders with farms in our network. No spot-market volume, no chasing receivables. Tabla handles all buyer-side compliance documentation — Buy American attestation, geographic preference records, NYS 30% tracking — so you do not manage paperwork for each institutional relationship individually.

What we look for
Regional farms within 200 miles of New York City.

We source from farms in the Hudson Valley, New Jersey, Pennsylvania, and Connecticut. Particularly interested in fall storage crops — apples, squash, root vegetables — and year-round producers of greens, mushrooms, and eggs. GAP certification is preferred but not required to start a conversation.
