There's no reason a school in New York City should be serving apples from Washington State when there's an orchard an hour away. The distribution just hasn't been built for it. That's what we're fixing.

Most institutional food moves through three national distributors who charge high margins on produce that's traveled weeks to get there. The farms close enough to deliver fresher, better food in less time are locked out because the paperwork and payment terms were never designed to include them. Tabla works demand-first — we collect committed orders from institutional buyers before placing orders with farms. You know what you are selling before you harvest it.
We aggregate purchase commitments from NYC schools, hospitals, and universities, then place confirmed orders with farms in our network. No spot-market volume, no chasing receivables. Tabla handles all buyer-side compliance documentation — Buy American attestation, geographic preference records, NYS 30% tracking — so you do not manage paperwork for each institutional relationship individually.
We source from farms in the Hudson Valley, New Jersey, Pennsylvania, and Connecticut. Particularly interested in fall storage crops — apples, squash, root vegetables — and year-round producers of greens, mushrooms, and eggs. GAP certification is preferred but not required to start a conversation.
